Alessi Farro is pearled farro, an old Mediterranean grain with a nutty flavor and an interesting texture. Pearling removes the hull, which brings the cooking time down to about twenty minutes. Farro is sometimes called the mother of all wheat, and it mattered enough to the Roman legions that it was occasionally used as currency. It is high in protein, fiber and iron. Cook it for soups, salads, stews or casseroles, use it in Tuscan recipes, or serve it in place of brown rice.
