This is a cajeta, the Mexican caramel close to South America's cow's milk dulce de leche, with a touch of maple. Rich, creamy and not too sweet, it has no preservatives and no corn syrup. Each small batch is made in Vermont from local goat milk and hand-stirred in copper kettles.
Pour it over ice cream, apples or pie, swirl it into coffee, cocoa or tea, or use it as a dip for pretzels and fruit. Cheese, brownies, cheesecake and fudge work too.
