This is cajeta, the Mexican caramel that is similar to the South American cow's milk version, dulce de leche. It is rich, creamy and not too sweet, with no preservatives and no corn syrup. Fat Toad Farm makes it in small batches in Vermont from local goat milk, hand-stirring each batch in copper kettles.
