This is a cajeta, the Mexican caramel that resembles South American dulce de leche, the cow's milk version. Rich, creamy and not too sweet, it has no preservatives and no corn syrup. Fat Toad Farm makes it in small batches in Vermont from local goat milk and stirs each batch by hand in copper kettles.
Use it on ice cream, apples, brownies, pie or cheesecake, in coffee, cocoa or tea, or as a dip for pretzels and fresh fruit. Cheese and fudge work too.
